Baptism: Is it Really THAT Important?

Yes.  Yes it is. :)

We learn from the Bible that Jesus himself was baptized to "fulfill all righteousness."  What exactly does that mean though?  Was He only setting the example?

In the Book of Mormon we learn that it was more than just an example.  Jesus Christ was showing us that He was completely obedient to the Father.

"Know ye not that he was holy?  But notwithstanding he being holy, he showeth unto the children of men that, according to the flesh he humbleth himself before the Father, and witnesseth unto the Father that he would be obedient unto him in keeping his commandments" (2 Ne 31:7).

That is what our faith leads us to do!  It leads us to humble ourselves and trust that God has asked us to do things that will bring us happiness.  It leads us to WANT to do those things that He has asked.

Baptism is just one of those things :)  He has asked that each of us "humble" ourselves and "witness" unto Him that we will be obedient in keeping His commandments.  It is an outward expression of our inner commitment to follow our Savior.
